Celiac disease is a medical condition in which the absorptive surface of the small intestine is damaged by gluten. This results in the body’s inability to absorb nutrients: protein, fat, carbohydrates, vitamins, and minerals, required for good health.
The disease’s symptoms are many and varied: anemia, weight loss, cramps and bloating, chronic diarrhea, fatigue, irritability…. There is a great variation in sensitivity to gluten among those with celiac disease.
